In Episode 2 of Sandwich Club, we welcome Octavia Tomyn.

Octavia Tomyn is a mother and artist who spent the first part of her career in the fashion industry before becoming a full-time and widely celebrated artist. Inspired by motherhood, womanhood, identity and faith, her work explores the complexities of being human though symbolism, line and figurative body language.

Octavia was introduced to this sandwich when visiting Milan with her husband and daughters. She has fond memories of eating it on the steps of a gorgeous old building in a pigeon-filled piazza, and was thrilled to find they make a similar version at a local panini shop back home in Melbourne.


From Melbourne to Milan and back again, here is a loose guide to this damn good sandwich.
You’ll need:
Focaccia
Mortadella
Burrata
Toasted Pistachios
Honey
Slice your focaccia. Add mortadella, torn chunks of burrata (you want that gooey inside), toasted pistachios and a generous drizzle of honey.
